I'm definitely focused on dark beers, and some experimental stuff ( I like to be different). A Dry Irish Stout, and a rich coffee/chocolate/vanilla influenced Porter are foremost in my mind. No IPAs, not a big fan, and everyone else in California does them. A nut (almond or macadamia) brown on the darker side. Does a Yerba Mate-citrus-walnut (with a possible Belgian yeast) beer sound interesting and do-able? I think so, and these are the beers I'm working on at the moment. In the meantime, I'm brewing my vanilla-citrus ginger  beer (pictured). All organic ingredients of course, all from scratch. Also experimenting with recipes for root beer. Stay tuned...

The finished beer has been getting good early feedback, showed well at a homebrewing compeition in Seattle in June, and we'll look forward to brewing more of it, as well as working on a recipe for a good Rye beer next! The future plans will be enough to distribute locally as well as enjoy at home, and move to making the beer in a larger facility.
